Baileys Tiramisu

Life at a pause. It's one of the little pieces of heaven to be able to pause time and take it easy. 
During those times, it is only inevitable to gain some weight and have yourself some indulgence.
Let's go straight to the recipe. I combined my most favourite things to produce the Powerpuff Tiramisu.
Varlhona Cocoa, Baileys Coffee Liquer and Tiramisu (doh).

Cheese Bundt Chiffon Cake

Would you believe me if I had told you this was a very easy cake?
And if like normal people, you're a cheese lover, you might want to go crazy on the topping.
This is the second best way to get kids to love you. The first would be crispy fried chicken. Yea, i know how to get me some of that lurvin.
This recipe might surprise you but it'll get you some of that velvety smooth, melt-in-the-mouth, overly-cheesy cheese cake!

Ps: Ovalette is a stabiliser for chiffon cakes, you can substitute it with same amount of condensed milk.

Birthday Cake

Every once in a while, i would try my best to make someone happy. 
I cooked my mom a full pasta meal when i was merely 10 years old.
I would drop little trails of (eherm) pixie dust to a birthday present. 
I was very much reprimanded in both occasions. 
As i remember, it was "not pixie dust".
 My little "happy" giveaways never end beautifully.
Soon enough (about 10 years), I stopped trying.
 Then, i met you.
You fell asleep.
Yes, my little "happy" treats never end successfully. 
But this cake was delicious.

Milo Pound Brownie Cake

"You're almost there. 2.8km", the board writes.
We glanced at one another amongst our group, as if a ritual before the war. It wasn't a question, really, nor a suggestion. We knew we had to start running. 
From our relaxed attitude, it was obvious this wasn't our first run. Run the first 0.2km, then, run the last 0.4km and run whenever a teacher is at sight. Those were the rules. And from experience, be aware that a teacher jogs along with the very last runner.

But here's the catch. At the end of the 3.2km race, you'd be offered a cold cup of Milo and a long queue to the loo.
This was how Milo came into a hormonal-pimpled-rebelious-teenager's life who now has owwies in her teeth because she sleeps with a spoonful of milo-slash-nutella in her mouth.
The name is Milo. I am beautiful chocolate and ovaltine malty made better. I taste best when half-sticky or coating the surface of cold milk.

Tres Leche Cake - Birthday Post

Dear 30-year-old me,
In the afternoons that you think back about me (hopefully a girl less awkward than you are now), what will you recall? Will you remember the times you tried using "the force" and was caught focusing to move a piece of paper? Or will you recall the time when 5 horses had to wait whilst you negotiate with Ms Celestine to stop eating the grass?

You've been through a lot, Ms 30-year-old. Mostly, involving moments you wish you had wiser judgement, better yet, you wish you had MIB's neuralyzer. You also wish that your friends had informed you about laughing like a black boar gasping for air. Or pulling off a green afro or cat ears.
However, Ms 30-year-old, these awkward moments are moments you should cherish. They are the moments you are at ease, moments you let go of your guard and moments when you are truest to yourself. You share these moments with people who won't leave you despite your "reasonable" nature or your 3 layers of tummy fat.

Then, there are other moments. These are the moments you regret. They are moments when you lie to yourself (convincing yourself that 3 slices of cake is rational). Moments you sacrifice others for yourself. These are moments you should have to pay for but you were let off with kindness. These are the moments to guide you.

Grapes Breakfast Cake

Back when I was studying, my cousin had a habit of cooking up snacks to prep me for my exams. Then, she would knock on my door (occasionally shocked to see the state of my well-being) and wish me "all the best". Hours later, as I walk out the exam hall, I would receive an enthusiastic message from her asking how i did.
As time goes, I started to miss these little things. So, I'll be passing on this sweet habit to all of you.

This cake is a tribute to examinees, particularly those who are "winging" it and those who are caught dancing to Billy Jean with a neon colored head band and drum sticks made of crumpled lecture notes (definitely not me).

Its a simple Breakfast cake. Not too sweet or sour, not too dense or light. Perfect for exams and fricking delicious.

Zebra Pound Cake


I don't have a bundt pan. I'd kill to have one. 
Really. Tell me who, I'll bring my razor along.
That being said, I hope you'd be able to justify these cakes not with how they are, but how they could have been (like Baker's Royale). Treat it like you would treat your gothic teenager. 

This cake reminds me a lot of my kiddo days. Simply vanilla and chocolate was all I know, was all I thought i would ever eat, was all the flavors I thought existed. 60 cents worth of cake wrapped in clear plastic wrapper. 3 layers, no bigger than your 10 year old palm, each glued by chocolate chantility cream. I take on the slice layer by layer, up to the last layer, the last bite. The conquest was about to end, I was about to wake from the dream, it was unbearable. I wanted more, just one more.

But no, there's always only 1 for each of us. No more, no less. It was a simple little treat. It wasn't a meal, it wasn't dessert. Just a break from the day. Just 10 minutes of silly chocolate-covered-teeth smile to let our mom know, we're happy today, we're doing fine today, thank you for today. 

I had to share this experience with you foodies. It's not always about how expensive the ingredients are. It's not about how pretty the cake is adorned. It's not the box or the wrapper it comes in. It's just us, the cake and that very day.

Sweet Potato Cake with Cream Cheese Frosting

It's Miss Wu's birthday. 
Although it was on the 16th of April, it's never too late to bake her a cake and have it all to myself?! As a present, I'm giving her my fat tummy!
Miss Wu brings people together with a simple wave of her magic wand, sexy-as-hell bodz and her cooking is crap-on-a-fricking-cracker-marvelous. Although currently living her life in London, failing to mail me a can of snow, I still love her very much!

Ms Wu always exaggerates my desserts and exaggerates me as a person. She even admitted that I make her life beautiful and special. How can I not be smittened. 

So, I baked her a Purple Sweet Potato Cake with Cream Cheese Frosting
Recipe from bon appetit at Epicurious, adapted by moi.
The cake is beautiful on its own. Cinnamon tackles the potatoey feel of the cake (feel free to use other spices). The color, enchanting, like yours truly. BUT lets take it up a notch! My go-to cream cheese frosting by Janni from Allrecipes, adapted by moi.
I finally found a full-fat tub of yoghurt. Big difference, please use full-fat.
So let's all wish a happy birthday to my dearest friend, Ms Wu!

New York Cheesecake with Strawberry Glaze

What is your favorite cake?!

One sunny afternoon, the Mr asked me, “do you know what’s my most favorite cake?” I yelled in pride because “Doh! Brownies!!” I knew I was right! I knew it!
I wasn’t.
“That’s a bar, not a cake.” He chose one moment to be picky and I must say, very well chosen!
(Rolls eyes) “What then?” already, I'm thinking it would be blueberry or chocolate.
Beep Boop! Wrong again. It’s well along the sides of strawberry, cheesecake and pie, or all the three in one! 

Anywho, the Mr loves cheesecakes but doesn’t like cheese. Smearing cheese on everything is “Eww”. As opposed to me, I want a cheese tower every occasion possible. Yes, a cheese tower. Ok, maybe just a cheese platter. (*hints)
So! I baked him a cheesecake. There’s no special occasion, yet no occasion more special than this. Simply thanking the man. Thank you, deer, so much for our similarities but... even more for our differences.

Brownie Layer Cake with Chocolate Pudding and Caramelised Almond Flakes


I wanted a full head-on brownie, the best brownie ever. Dark. Bitter. Heavy. Chocolatey. But more than the usual "slice of brownie".
Interesting fact me #1: 
I often talk to myself, "this goes here, that goes there". Of course, not loudly (that would be crazy). But the hand gestures seem to freak people out. 
Interesting fact me #2: 
I am 96.125% sure if people know what's going through my head, I'll be killed within the amount of time it takes for people to gather around, holding torches, chanting "die! die! die!" (because that's the fun way of killing someone).
You see, folks, I love my "I-can-eat-everything-i-want" days. Usually followed by moments when I was pleased with Mister Scale-o, or after days when I succeeded to lay off the Kettles chips. But also because brownies is Mr's favourite! And the way to a man's heart is through his stomach!
Interesting fact me #3:
Whenever I giggle for more than 10 seconds, i would have a hard time stopping. This could go on for minutes even hours. And it tends to happen when I have something in my mouth. I'm a sprayer!
B-back to the brownie. Since i have the day off to  eat whatever I want, I wanted cake! Of course, nothing new there. But what could go well with those bitter, dense brownies? What could make brownies even more salivating than it already is? Something smooth. Velvety. Sweet. Light. Something that speaks the epitome of comfort.
Interesting fact #4:
I am very afraid of animals. All kinds of them. Even Hamsters.
 Interesting fact #5:
 I appreciate the gesture and effort of a gift more than the gift itself. Doesn't matter if it was a vintage $5 spoon or a $1000 DSLR. 

Puddings! Gooey dark brownies with sweet milky puddings. Love is on the plate. Of course, when there's so much in a bite, I always like to add a little extra topping to set it on the go. Caramelised Almond Flakes!
Interesting fact #6:

Sometimes my body refuses to go back to sleep after 3 am. Occasionally, it needs to bake something.

Interesting fact #7:

I think I'm a closet dancer (gasp!).

Hence, Brownie Layer Cake with Chocolate pudding and Caramelised Almond Flakes was born.

Apple Fancy Cake

Whoever said that we bloggers had to be cool? Receiving a reward, "it's so nice of you". Hitting 50 comments, "Oooh thank you". And baking an awesome cake, "it wasn't easy but i did it". That's like pasting wings and a halo on a bull making it fly, singing "red bull gives you wiiiiiiiings". I'm the furthest person from cool.
You see, when i receive a reward, i dance my victory dance! And when i hit 50 comments, I sing my victory song! Oh and when I bake a pretty cake, I parade with it, wearing it on my head because it was hell of a hardwork! Well, that's the truth, folks... ok... My victory song and dance may have been the Hippo and Dog song... (weeeeeeeeeeee...we-um-um-um-a-weh) eherm*. But oh sweet mother of everything victorious, I'm never "cool" when hearing news!
So, I took the liberty of this awesome cake to ask for votes:
Pineapple Upside-down cake VS Apple etc etc etc cake, aka Apple Fancy Cake.
This does not mean I don't love pineapples, I love them. But this apple cake, oh boy, ooohhhh bu-oy..

Apple Fancy Cake


Chunky apples and cream cheese in a moist coffee and rum cake. The apples caramelized, with a hint of cinnamon and cooked to gooey perfection. The cake, light, moist but with rum. And for the final kick in the pants, cubes of Cream Cheese combining all the flavors together.

Black Tea Cake with Strawberry Tea Jam

There is one thing i can truly be proud of. I do not get sick. Germs hop away at the touch of my skin and in great fear. Which reminds me, I also know how to take care of sick people. Especially those stubborn ones, if you know what i'm sayin'.
Hence, when Jes says 3 cups, you gotta listen. 'less you want her to go down the crazy road. And you don't want her going there! You really don't. I'm just sayin'
 3 cups of Chinese herbal tea (not those served in your Dim Sum restaurant, those are a treat) a day. I assure you, you'd be thankful in the end. In return, when i'm feeling like less of a "devil" or when i couldn't sleep at the wee hours woken up by the exact thoughts of an awesome cake, you'll wake up to a slice of this. Deal?
This cake is one of my most random creations...who am i kidding, this is my most awesomest random creation that didn't turn out a disaster! May the little fur-less bunny rest in peace. 
I woke up at the strangest hour this morning, thinking up various flavours that will jingle all our tastebuds, as well as our eyes.

Tiramisu and Homemade Ladyfinger (For Adults Only)

I've gone over my head real bad this time. How could I possibly endow myself with such a task, enduring this silky amazing'ness I call Tiramisu. Tis like leaving trails of sweets to the snack cupboard which is left unlocked for a set of horrifying triplets to bring you sugar tremor.

Just a few more and I assure you, folks, I will need a new body to reside in. But its Tiramisu, you say. Its the silky amazing'ness, you say. ... End of discussion.

My relationship with food was never healthy, is never going to be healthy. My desire for desserts was once diagnosed by a psychology-student friend as an exertion of unfulfilled childhood needs. That happened before I fell in love with burgers and sandwiches. Let's just say, that changes everything.

But Tiramisu, oh dear Tiramisu. I fell in love with you the moment I laid eyes on you. Now, the recipe. I found this recipe long before I thought i could blog about baking. I have long forgotten where i found it, all i know was that, it is wicked good, but wicked.

Pink Ombre Layer Cake - Another Birthday Post

 Happy Birthday, Christina.

To be honest, when I first came back after my time abroad, I was afraid. Afraid how I would settle in, afraid of what's different and what's new, afraid how i need to re-connect with my "old" friends.

 They were the people I spend my every days with. We'd be in school together, have our lunch together, shop together and hang out every weekend together. However, as I left for my commerce degree, we started to grow apart. The years I've missed are the very years they needed someone. The years I was away were the very years our characters were built. We've changed. I've changed.
Yet, as gentle as they were, it was as if i've never left. They welcomed me. No awkwardness, no ice breakers, no need for hugs or tears, it was just the way it has been and should be. 

Specially to C. We've confide in each other, we've shared our moments, played mean pranks to one another (maybe that's just her), embarrass one another (again, just her) and had too much fun and laughs (maybe just me).

As she goes through her toughest points in life alone, I could only bit my lips and curse the people who made it hard for her. But not anymore. C, amongst the presents and cakes you've received today, my utmost present for you is. 
"A true friend is one who stays through trials of deserts and storms"

Marbled Cinnamon Ginger Almond Loaf Cake

Realising the arrival of December was a shock to me. No matter how much i've prepared for these last 4 weeks of 2011, I could never comprehend how my time went by. How did Christmas creep up so soon? Did i fulfill all the goals i've aimed for during this time last year? What will be my new goals then?

Once these questions popped, my thoughts were  in disarray and my heart begins to beats like an R&B song. I was worried, I was afraid, I was excited. And my eyes were blinking in jitters as if it was trying to replay what it has captured.

I thought about everything that happened. All the memories i should keep (because it tends to auto-delete), all the memories i should let go of. This year was a year of transition for me. Graduating from my Bachelor's degree, moving back to where i grew up, where i was born, working an office job, and revamping my blog to what it is now. I went though fearsome events, surprising events, remorseful events and happy joyous events.Going through all that change is never easy. I have a lot to forgive and forget, a lot more to be forgiven for and most of all to be thankful for. 
One of the most amazing joyous events I have went through, is how I improved my baking skills. I went through angel food cake, macaroons, cinnamon rolls, 6-layer cakes, rainbow cake, flaky crusts, swiss rolls and  mousse cakes. I now know what's creaming the butter, what's "mixing it like crazy" and what's "do not over mix". So, why not put that to use?

I'm not a big fan of ginger, how it tastes and how it smells. However, i'm the biggest fan of Gingey the gingerbread man (and i means "biggest" literally). Hence, when media shows its victory (once again) as i purchase this $25 can of ginger cookies, which i don't adore, i had to put it to use.

Immediately, pound cake came to my mind. I've never made one before and never succeeded in making cakes with that buttery, soft, yet dense texture. As far as my baking adventurist goes, I had to make one. Hence, when i saw this at Technicolor kitchen, I knew it was perfect for me. There wasn't too much ginger and the play of Almond with spices intrigued me.

Six Layer Chocolate Rum Cake with Swiss Meringue Rum Buttercream

Have you ever thought of being a little kid again? Where days went by without you worrying about what's going to your hips and thighs. Where running around 5 minutes made you perspire like 45 minutes extreme yoga. Where eating 2 slices of cake was "awww, so cute".

I do. A lot. You would know that exact second when I decide to indulge my inner child. Especially when i proclaim random resolutions like "I ain't sharin' my burger!" or "All meat no vege!" or "I'm eating straight from the pot!" Unfortunately, I kid not.

That's where the 6-layer cake comes in. And the rum...is just to congratulate us for getting over being a 5 year old. The cake I was looking for is a "black" cake. When I was searching for "the" recipe, I go to my favourite cake site and found this. However, things seemed a little too professional. Hence, I went to my new favourite site and found this same recipe. Who could resist challenging themselves, when 2 trusted individuals have tried-tested the recipe.

Mango Upside Down Moist Chocolate Cake

Firstly, let me start by warning you, you're going to want to make these. So get prepared to buy some cocoa. I took 30 minutes to get the batter ready and left it to bake for 1 hour whilst meeting my girl friends for dinner. When we came back, the dessert was ready.

This cake isn't the fluffiest cake you will ever eat, neither is it the prettiest classy girl in class. However, I assure you, you would want seconds and thirds, each a thicker slice than before. It's so very chocolatey yet not sickeningly sweet, perfectly moist yet not buttery, airy yet dense and with a simple addition of citrus/fruit, it's simply addictive. 

Before we begin with the cake, I would like to thank all of you for the support. I am utterly grateful that I have people reading putting up with what I have to say. So here's to all our hopes and dreams! :)

Mango Upside Down Moist Chocolate Cake! So you follow Jes' blog and you ask yourself, "ooh... mango? she said she hated mango cakes? Caught ya!" Let me explain. I love mangoes, as a fruit, especially these ones from my mother's hometown. These mangoes were from a village called Pasuruan in Indonesia. Even in the capital city, Jakarta, these mangoes are rare and much more expensive than other mangoes. 

This mango is called Mangga Harum Manis, translated to Fragrant Sweet Mango. They're so sweet and fragrant that it is difficult to cultivate (due to attracting insects). Hence, when an aunt of mine brought 10 of these mangoes to my arms, ripening at the same time, I had to come up with something. Whilst I would prefer to have them the way they are, it's almost impossible to consume all 10 within a few days. Hence, I decided to whip up a mango chocolate cake (chocolate because I love it) for the usual friday "gathering" with the girls. In conclusion, no you did not "catch me".

Angel Food Cake

Its coming to the end of October and this year has been going way too fast. Some of us are now with children, some of us are working adults, some of us are studying and some of us living the dream of being a full time baker. Yet, we all have one thing in common... We love to serve that perfect dish just to see those smiles.

Sadly, that doesn't come easily. It is with practice, many many finger-crossing, many many more short little prayers and most of all, research and study. Even then, we have days that just go wrong. Days where butter decides to fail us, days where cream goes bad for no reason and days, weeks, months and years of little accidents that consistently, persuasively and unfailingly happen to us.

 Well, this one goes to you. When exams are coming, when work is overwhelming, when kids are a little annoying or when life is just a little more than hard to get by. Cheer up! Stop your busy schedule, take a stroll, look up the sky and take that moment to smile. You're not alone, my friend.
So here's a lot little extra sugar for your day!

I decided to color it marbled pink because:
1. the friend i wanted to cheer up loves pink, it always makes her a little bit happier.
2. I'm not a pink lover, I love Angel Food Cake's white as cloud color.
3. Its NBCAM. It's gotta be pink!
