Baileys Tiramisu

Life at a pause. It's one of the little pieces of heaven to be able to pause time and take it easy. 
During those times, it is only inevitable to gain some weight and have yourself some indulgence.
Let's go straight to the recipe. I combined my most favourite things to produce the Powerpuff Tiramisu.
Varlhona Cocoa, Baileys Coffee Liquer and Tiramisu (doh).
Baileys Tiramisu
8-oz mascarpone cheese, room temperature
1/2 cup confectioners’ sugar
1 cup heavy cream, cold*

2 tsp vanilla extract
1 cup strong brewed coffee, room temperature
1/2 cup Original Baileys coffee liqueur
1 tbsp Varlhona cocoa powder
approx 30-36 ladyfingers

1. In a large mixing bowl, beat mascarpone, confectioners’ sugar, heavy cream and vanilla at high speed until mixture is fluffy and very smooth. 
2. In a small, shallow bowl, combine coffee, Baileys and cocoa powder. 
3. Dip each ladyfinger into the coffee mixture to let it soak up some of the liquid (2-3 seconds) and place in the bottom of a 8×8-inch baking dish. The bottom of the pan should be completely covered with the ladyfingers in a single layer. (Do not completely soak the ladyfingers in the coffee mixture.)
4. When there is a full layer of ladyfingers, spread half of the cream mixture on top of them.
5. Repeat with remaining ladyfingers and cream mixture.
6. Dust with cocoa powder
7. Cover and refrigerate overnight, or for at least 6 hours.


Now, you may envy those professional looking cakes with thin layers of tiramisu and desire to achieve likewise. Hence, there are minor changes you have to look out for. 
Firstly, you may require more lady fingers and muscular hands.

1. In a large mixing bowl, beat mascarpone, confectioners’ sugar, heavy cream and vanilla at high speed until mixture is fluffy and very smooth. 
2. In a small, shallow bowl, combine coffee, Baileys and cocoa powder
3. Dip each ladyfinger into the coffee mixture very quickly and place in the bottom of a 8×8-inch pan. The bottom of the pan should not be completely covered with ladyfingers. Instead, use the back of your measuring cup with a flat surface and push down the soft lady fingers to create a thin flat layer.
(Note: Removable bottom pans are desirable. Otherwise, use a plastic wrap to line a pan.)
4. When there is a full layer of ladyfingers, spread a quarter of the cream mixture on top of them.
5. Repeat with remaining ladyfingers and cream mixture as many layers as desired.
6. Cover and refrigerate overnight.
7. Carefully remove tiramisu from the pan and dust with cocoa powder.
'Life's not getting any easier' was what i learnt in these few months. Sometimes, it gets so unbearably hard that you wonder, you start to wonder. However, when you think back of the things that changed your decision, maybe, just maybe, you'll be able to feel a little bit relieved.
After-all, if it were any easier, love wouldn't be the hope for life. And if it were any harder, it wouldn't be love.
